Editing Chapter names after building is fairly impractical. It can be done by hand in a hex editor, as long as the new names are the same length or shorter than the original names. An enterprising hobbyist might see a market opportunity for a slick little application that does at least that much. It would take a good bit of extra effort (actually, rewriting several offset-based portions of the QuickTime/MPEG-4 file format) to set it up so that the name length was irrelevant, though.
Audiobook Builder tries to take the initial Chapter name from the incoming file's tagged name, then its actual file name if a tagged name is not found. You can change Chapter names before building, though, either by double-clicking a Chapter or by expanding the Inspector at the bottom of the window and selecting the Chapter you want to edit.
